History of Biryani in India
Biryani was first made as a meal for the Mughal soldiers, the rice, meat and spices in one dish made it a meal in itself. It was nutritious, filling and easy to make they just had to assemble the ingredients in a pot and let it cook. It was served in the many Langars of India (military kitchens) This was then taken to the masses because of its great taste, the royal variations had a better taste and more ingredients. The Biryani was originally popular with the muslim community in India and spread to all other communities because of its great taste. The centers of Biryani excellence in India are all situated in the former muslim kingdoms of India like the Hyderabad state, the nawabs of Lucknow and of course the Mughal Delhi. Other popular rice and meat one dish meals are called Pulao in India. Which is derived from the spanish Paella which is a rice and meat dish, It could also have been the Greek Pilaf.
What is the difference between Pulao and Biryani?
The essential difference between Pulao and Biryani is the method and spices. Pulao is made on a flame and I done in an hour or so, whereas the Biryani is slow cooked in steam for several hours. The name Dum (steam cooked) Biryani comes from the usage of this cooking method. The Biryani Handi which is the large metal couldron/pot is sealed with dough and placed on burning coals bot at the bottom and on the top. The steam gives the biryani its special flavor by infusing all the aroma into the rice and meat. The meat becomes so tender that it almost melts in the mouth.
Pulao has additional ingredients other than just meat and rice. It has dry fruits, beans and sometimes vegetables added to the dish. The flavor and taste are great although different from the Biryani. Hyderabadi dum Biryani is certainly the best Biryani in the world.
